The North Georgia Technical College Culinary Program was asked to help prepare a meal and serve the troops on Father’s Day. The USO expected about 200 soldiers to pass through Atlanta Hartsfield Jackson Airport on that Sunday.
We were not surprised by their youth; We had expected them to be young. There was a gunny sergeant or two, much older and simply dressed; they wore their stripes in the creases around their wise eyes. A master sergeant was traveling with three Afghanistan soldiers; part of a training initiative. They all have stories to tell; some will become novels, others – poignant short stories. Most of them were on their way back to Afghanistan. They were all grateful for the food, and surprised that this banquet of baked ziti, roasted chicken, garlic rolls, sausage with peppers, green beans almondine and pie was “just for them”. One by one they were welcomed, invited to share the meal, thanked for their service and given a wish for their safe return.
It’s a humbling experience. We give a little lunch; they have offered their very lives.

With their hearts full of the St. Patties Day luck and charm, the US Foodservice team arrived at Hartsfield Jackson International Airport to serve the troops a wonderful meal as they waited for their deployment flights. Executive Chef Mark Paolillo put an Irish flair to the feast with corn beef & cabbage, bangers & mashed potatoes, peas & carrots, rolls & butter and finished of the meal with mint chocolate chip ice cream & brownies. The men and women of our armed forces truly enjoyed the spread and appreciated the effort put forth for them. Chef Paolillo commented, “It is easy to be passionate when I cook for men and women who put your heart and soul into protecting me and my family.” Thank you US Foodservice for your generous donations not only on St. Patrick’s Day but for all you give and do throughout the year.
As we begin a new year, the ACF Greater Atlanta Chapter would like to take a moment and recognize our military men and women for their service to our country. We are forever grateful for the freedoms we so often take for granted, freedoms that we sometimes do not realize we have and freedoms that are not free, but have come at a great price. Thank you to the men and women that missed the Holidays with their families. These brave men and women didn’t get to share the moments around the dinner table with loved ones or kiss that special someone as the New Year rang in. We the ACF Greater Atlanta Chapter appreciate all that you do for us and show that appreciation through Operation Chefs Unite (OCU). Thank you, Chef Michael Deihl, Bill Masden of Perdue Farms and the men and women who assisted him in preparing the Christmas Day dinner for the troops traveling through Atlanta’s airport. Also thank you, Chef Ron Horgan and those who helped him prepare the New Year’s Day meal. It is such a small offering to those who are sacrificing so much. Our warmest and best wishes for 2010 to all of the military men, women and their families.

We have come to appreciate those who are always looking out for us. Tots Kitchen could not be without the continued financial support of the ACF, Director, Members of the Board and Chapter Members. Our work of empowering the less fortunate with nutritional information and healthy snacks is a result of the ACF- Atlanta determination, year after year to stamp out hunger in our community.
Last month (December), we distributed 107 healthy snack packs and Christmas cookies packs (donated by a church). Each snack pack was loaded with breakfast, lunch and late snack items and an activity sheet with nutrition information.
Snacks: Breakfast cereal Shelf life milk Blueberry waffles Oranges and apples Microwavable spaghetti and meatballs 100% Juicy juice Pudding cups Whole grain corn dogs Oatmeal and raisin cookies
We had 10 nutrition and food prep classes with 138 students and 10 adults. There is so much need for parents to be educated about nutrition. There was one mother who did not know the nutritious benefits of vegetables. After the class, she asked if she could be a volunteer with us and she has been with us since
We added 4 schools with 73 new students who will participate in our holiday program only when school is out. They are: Gods House of Love, Wee Academy, Budding Scholars Center and Little Peoples Academy. There are six outstanding volunteers who help us with snacks distribution and a curriculum developer who works to help us where we need help.
The ACF- Atlanta is to be congratulated and thanked for the changes in the households of families in South Fulton. Overall, we have impacted more than 3000 children and their families with nutrition education and weekend back packs since January 2011. One woman came up to me in Kroger and asked her son if I was the vegetable lady. Her son had told her he should eat more vegetables, so she is buying more vegetables. Even on the streets, we meet children coming up to us and talking about how food will help them live longer and healthier. One of our teachers said a child told her that carrots makes a better snacks than what she had (an oatmeal bar). Teachers and parents alike are warming up to the fact that their children are being exposed to the real benefits of foods. Yes, we are making a difference in how our children influence their parents even in this way. This makes us really happy.
