Flatfish Class

The ACF- ACT Center in conjunction with Inland Seafood will be presenting a four hour class awarding 4 CEH credits.  The class title is:  The Fabrication, Application and General Information Regarding Flatfish. This class is to help educate chefs on the history of flatfish, current state of availability, fabrication and cooking application of different flatfish species.

The class will be held March 23, 2010 from 9:00am to 1:00pm at the ACT Center. Location: Food Sales East-Georgia, 1485 Lake Parkway, Lawrenceville, GA  30043.  The class will be limited to the first 30 attendees to register. There will be no cost to attend classes. A sandwich lunch buffet will be provided for registrants. You will receive 4 (ACF) CEH credits for attending this course.

Chef Rusty Sigmon is now a certified instructor/proctor for “Serv Safe” and will be offering “Serv Safe” training and testing at the ACT center to all at cost. He will be offering 1 day sessions and 2 day sessions. The minimum number of students would need to be at least 5 and no more than 15. The cost per person will be $150.00 to cover the book, test and mailing. The date will need to be flexible and announce whenever the class is filled.
